Tonight while watching a series of great chick flicks I enjoyed the last of my bag of dibs.  Truly a moment of watching TV and eating bon bons.

White Chili Recipe - from a class at the Culinary Institute of America.
White Chili - 1 cup dried chickpeas (garbanzos), 1 cup dried white beans (great northern), 1/2 lb ground chicken or turkey, 3/4 cup minced onion, 3clove garlic minced, 1 1/2 tb jalapeno chile minced, 2 tb flour, 1 tb ground cumin, 3 cups chicken broth, 1/2 cup fresh chopped cilantro, 1/2 cup pea barley, 1 lb cooked chicken or turkey shredded (can just increase ground meat), salt and pepper to taste, 1 cup each white cheddar & Monterey Jack, 1 1/2 cups sliced scallions or green onions, 1 cup diced tomatoes.

Soak beans overnight. Boil water, add beans, return to boil, cover, turn down to simmer 60 mins (tender). Brown ground meat, add onion, garlic and jalapeno saute 4-5 min.  Add flour and cumin stir for 2 min. Add chicken broth, drained beans and barley.  Bring chili to a boil, then reduce heat, cover, simmer until barley is tender (~45 min).  Add cilantro, shredded meat simmer 15 min.  Add salt and pepper.  Serve chili garnished with cheese, scallions and tomato.  Can be served in a bread bowl.  Without beans, broth and barley can be use for nachos on chips.
